Jamaican Chicken Stew
This hearty Jamaican Stew's main ingredients are chicken, sweet potatoes, red pepper and curry powder.
This is one I have trouble stopping at two Mealpods! Yum Yum Yum.

Ingredients
2 cans 15 oz fire roasted diced tomatoes (drain and keep juice for marinade)
2 garlic cloves minced
½ tsp thyme
1/4 tsp pepper
1 tbs olive oil for marinade
1 tbs coconut oil
2 medium sweet potatoes, peeled and chopped into 1” cubes
2 cups sliced carrots the size of baby carrots
1 medium red onion chopped large
1 red bell pepper cut into chunks or short strips
2 ½ pounds chicken breast cubed
1/2 tsp red pepper flakes
½ tsp allspice
4 tsp curry powder
1 cup chicken broth
1 can (14 oz) coconut milk (I use light unsweetened)
salt and pepper to taste
Chop chicken into mouth-sized bites
Make marinade by pouring the drained juice from the canned diced tomatoes. Add 1 tbs olive oil, ¼ tsp thyme, 1 tsp minced garlic and 1/8 tsp black pepper. Marinate the chicken in the fridge while you get everything else ready.
Put your crock pot on high and add 1 tbs coconut oil and the other 1/2 of the garlic. Cover and let sit while you get your other ingredients ready.
Peel and chop the sweet potatoes and carrots. Chop the red onions and red peppers. Put them in the crockpot. Also add tomatoes, coconut milk, chicken broth, curry powder, allspice, red pepper flakes. Drain chicken from marinade and add to the crock pot. Mix it well. Cook on high for 5 hours or until sweet potatoes are soft. When there is about 30 minutes left add the red bell peppers so they stay a little crisp.
The result is soupy so you may want to freeze your servings in plastic containers or you can take a cup of the potatoes, carrots onions (anything but the chicken) and puree it in a food processor. When added back in the stew it will thicken the stew some.
